Ingredients
500g Basmati Rice (2 cups)
400ml Coconut milk ( 1 2/3 cups)
400ml Hot water ( 1 2/3) cups)
400g red kidney beans ) 1 1/2 cups)
4 sprigs of Thyme
3 spring onions chopped
1 scotch bonnet chilli
3 tsp allspice
2 tsp paprika
2 tsp coriander powder
2 tsp cumin
2 cloves
2 cardomen pods
salt to taste
pepper to taste
Helpful tips:
* Make sure to weigh your rice and liquids, it will help the rice to turn out dry and not soggy
* After rice is cooked. You can spread the rice on a tray to let the steam out, which helps the rice dry faster
