This can be made both in the oven and on the grill, and has beautiful notes of lemon, and fruitiness and heat from the peppers.

INGREDIENTS

2 lbs, Chicken Drumsticks and thighs

Marinade

1 Large Red Onion, roughly chopped
1 Large Red Bell Pepper, roughly chopped
Garlic paste
ginger paste
1/2 tbsp, Smoked Paprika
1/4 cup, Wine Vinegar
Juice 2 Lemons
1 tsp, Sugar
1 tsp, Salt
1 tsp, Black Pepper
3 tbsp, Olive Oil
pepper powder
peri peri ready prepared sauce

METHOD

In a food processor, combine all ingredients for marinade and process until smooth. Transfer 1/2 of marinade to a saucepan and simmer on medium heat for 15 minute until thickened. Remove from heat and allow to completely cool. This will be your sauce for dipping after the chicken has cooked.

Pour the remaining half of the uncooked marinade over the chicken and mix to coat. Allow to marinate for a minimum of 1 hour to overnight in the fridge.

To Cook

Grill on medium-high heat for 15-20 minutes until slightly charred on the outside, and juicy and tender in the middle.

Preheat oven to 450 degrees, and bake for 20-25 minutes until slightly crisped on the outside, and juicy and tender in the middle.

Serve with reserved Peri Peri sauce on the side.
