How to Make Midwestern Goulash

I’m a Midwesterner at heart, despite being a Southern transplant for nearly two decades. Fall is the time that I miss the north the most. I miss crisp weather and I miss autumn leaves. Goulash is one of those comforting fall dishes that makes everything seem more autumnal. It almost makes you forget that outside is kind of sticky and warm still.
Based on the recipe from the Fresh 20 cookbook, I do a few variations to make it my own.
