Ingredients-
2lbs ground beef
4 14.5 oz cans chili ready diced tomatoes
2 14.5 oz cans Bush’s black beans in mild chili sauce
1 large onion
1/2 green and yellow bell pepper
2 cans lager beer
1 pack of McCormick Mild Chili Mix
2 tbsp minced garlic
1 tbsp cumin, paprika, chili powder, salt, and pepper
Sear the ground beef in batches in a cast iron skillet. Don’t just dump all the beef in the pan. That will steam the beef and turn it a gray color. You want to sear it like a steak. Drain the fat between batches.
Chop 1 large onion and 1/2 of a yellow and green pepper, and cook in an oiled dutch oven or stock pot. Add salt, pepper, cumin, paprika, garlic, and chili powder and cook for about 7 minutes until fully cooked.
Transfer meat into the pot, add chili mix and stir.
Open all cans of tomatoes and beans, add them to the pot and stir.
Pour 1 can of beer into the pot and stir. Add more based on your consistency preference. I like mine a little on the soupy side.
Simmer for 1 hour or longer if desired. The longer the better.
Add your typical garnishes. I like cheddar cheese, green onions, and fresh jalapenos.
