If you’ve never tasted Letcho or ‘Lečo’ as it’s spelled here in Latvia then you’ve never lived. I’m not sure if it’s a preserved salad or a canned relish but whichever it really is to die for, at least the way that Oma makes it it is.

Sit back and relax and watch us as we prepare, cook and can a batch of letcho. If you want the recipe then well watch the video because it’s nearly all done by eye and taste but you’ll get the idea.
