Loaded Potato Soup is one of my all-time favorite wintertime soups. It was 30 degrees this morning in TN. So, it is time to break out the soup recipes.
While I love other soups, nothing sticks to your ribs and makes you feel good quite like a good loaded potato soup. This one comes with a kick from my unique cajun seasoning blend.

Ingredient List |
– Cubed Bacon – 1 lb
– Salted Butter – 4 tbsp
– Chopped Yellow Onion – 1 med
– Fine Diced Garlic Cloves – 6
– Whole Carrots – 1 lb
– All-Purpose Flour – 1/3 c
– Gold Potatoes – 3 lbs
– Chicken Broth – 4 c
– Whole Milk – 2 c
– Heavy Cream – 1 c
– Cajun Seasoning – 2 tbsp
– Salt – 1 tbsp
– Black Pepper – 1 tbsp
– Sour Cream – 1 c
– Shredded Cheddar & Chives for topping
Cajun Seasoning Ingredients|
– Paprika – 3 tbsp
– Kosher Salt – 2 tbsp
– Garlic Powder – 1 tbsp
– Black Pepper – 1 tbsp
– Onion Powder – 1 tbsp
– Cayenne Pepper – 1 tsp
– Chipotle Chile Pepper – 1 tsp
– Oregano – 1/2 tbsp
– Thyme – 1/2 tbsp
– Red Pepper Flakes – 1 tbsp
Directions|
Pour ingredients into a bowl and mix thoroughly. Store in an airtight container.
Loaded Potato Soup Directions |
1. Heat a large soup pot on medium heat.
2. Add bacon and saute until bacon is crispy.
3. Remove bacon and leave bacon grease in the pot.
4. Add butter and melt.
5. Add your onions and cook until translucent.
6. Add garlic and cook for about 30 seconds.
7. Add your chopped carrots and cook for 2 minutes.
8. Sprinkle flour over onion/garlic mixture and stir until flour is fully incorporated.
9. Pour in your diced potatoes, chicken broth, milk, heavy cream, cajun seasoning, salt, and pepper.
10. Bring soup to a boil and cook until potatoes are fork-tender.
11. Reduce heat to simmer and remove half the soup into a blender.
12. Blend until completely smooth.
13. Pour soup puree back into the pot.
14. Add sour cream and 3/4 of your bacon into the pot.
15. Simmer for 10 minutes
16. Ladle out soup into bowl and top with shredded cheese, bacon, and chives.
17. Enjoy!
