Recipe:
300 grams ground beef
3 tomatoes, seeds removed
4 eggs
3 tbsp olive oil
1 tbsp tomato paste
3 garlic cloves
2 tbsp parsley, chopped
Water
1 tbsp paprika
1 tbsp black pepper
1 tbsp ground ginger
1 tsp cumin
1/2 tsp oregano
Salt to taste
Begin by removing the seeds from your tomatoes. Then grate your tomatoes and pour into a mixing bowl to begin the sauce. Do not use the tomato skin. Add in chopped garlic and parsley and tomato paste. Then add in the first 4 spices and salt. Finally add the oil and 1/4 cup water into the bowl. Pour this mixture into your Tagine or chosen sauce pan and turn on the stove to medium heat. Allow to cook for 10 minutes.
While your sauce is cooking, form your ground beef into small balls. After the 10 minutes, add the meat balls and the oregano into your sauce and cook for 5 more minutes. Now, crack your 4 eggs into the dish and place the lid on top. Cook for 3 more minutes until the yolks are over medium or to your preference.
Serve right away and let us know how it tastes! Maybe go for Moroccan style and eat using your hands and some fresh bread. B’saha!
