This video is the 3rd video in the series teaching how to make fish and chips with fresh homemade tartar sauce. In this the third video in the series I focus on the preparing and cooking of the fish.
This recipe creates deep fried fish that is truly amazing! As I have said many times there are a lot of chefs that taught me how to make this recipe and make it myself. The chef who had the idea of using vodka in the mixture is Chef Heston Blumenthal who I first saw on Masterchef Australia. The vodka in the batter is such a brilliant idea cause the batter came out perfectly crispy.
The preparation is a little tedious but it is well worth it in the end. I promise you that if you love fish and chips and want to give it a try by yourself, then this is the recipe for you!
Ingredients: Fish fillets (Any white meat fish is good, but you want to avoid fish that isn’t white).
Flour (for the dredge you’ll need about 1 1/2 cups to 2 cups)
Flour (for the beer batter you’ll need about 2 cups)
1 500ml can/bottle of beer (It’s up to you which brand you choose but the better the beer the more flavorful and rich the flavor will be.
fresh ground pepper
salt
garlic powder
onion powder
ground garlic
1 egg
smoked paprika
cayenne pepper
Mix well until the mixture is well mixed together. The consistency should be thick like a pancake batter. If it is too loose the end result will look more like tempura than fish and chips.
