I needed chorizo, checked my grocery store and they didn’t have it… so I made it! You’re gonna need 1 pound of lean pork meat and 6 ounces of pork fat. I got both from a boston pork butt. Trim off the large fat cap first… that’s what we’re gonna use for the fat. Then Cut 1 pound of the lean meat into chunks. Spread the lean meat and fat out onto a large baking tray then toss into your freezer for 30 minutes. 30 minutes later grab a large food processor then drop in half of your fat and half of your lean meat. Blend until a pebbly coarse consistency has been achieved. Once it has add that to a medium bowl along with 3-4 cloves minced garlic(1 tbsp + 1 tsp),2 tablespoons chilli powder , 1 tbsp + 1 tsp smoked paprika , 1 1/2 teaspoons coarse salt, 2 teaspoons Mexican oregano , 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon cumin, 1 teaspoon ground coriander, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cloves and 4 tablespoons apple cider vinegar. Mix until extremely well combined, I like to squish it between my fingers for a few minutes. And just that easy you have homemade chorizo! You can cook it immediately but I recommend wrapping it tightly then letting it sit in your fridge for 2-3 days to let the flavors get to know one another!
