with this recipe you will have the choices of what kinds of veges you wanted to bake and mix to your fresh salad. Just slice your vegetables and sprinkle some salt, pepper and any fresh or dry herbs and olive oil. Bake it for about 20 mins for 180 deg..or until vegetables are crunchy tender.
while waiting for your vegetables to be baked, prepare your dressing by squeezing half size of lemon (can be adjusted depending on how much salad you make), chopped spring onions, chopped cilantro, salt, pepper and honey or sugar. Add small amount of water about 1 to 2 tsp. Then set it aside.
Prepare your fresh salad by washing and drain the extra water. Arrange it on your serving plate by slicing some avocados, tomatoes and adding your bake vegetables , pouring your dressing and you can also add some cheese and balsamico.
