Be sure to adjust the garlic to your taste, 1-2 cloves is probably enough for most people (I love garlic so I went all in). Have a great day family.

INGREDIENTS:
2 Egg Plants
Salt
Black Pepper
Smoked Paprika
Avocado Oil (or any High Smoke Point Oil)
Juice of one Lemon
Up to 8 Cloves of Garlic (chopped)
1/2 of a Serrano Pepper (chopped)
3 tbsp Tahini
Garnish:
Olive Oil
Parsley (minced)
Red Pepper Flakes
LET’S COOK:
•Cut Egg Plants in half and place on a baking pan
•Coat the skin side with oil
•Flip the Egg Plant over to the flesh side and sprinkle with Salt, Black Pepper, and Smoked Paprika. Paint the flesh side with Oil
•Place in and oven preheated to 500ºF/260ºC for 35 minutes
•Afterwards remove from oven and let them get cool enough for you to handle
•Remove the flesh of the Egg Plants and put into your food processor or blender
•Add the chopped Garlic, Serrano Pepper, Lemon Juice, and Tahini to the food processor/blender. Blend.
•Go in scraped the walls of the food processor/blende, taste the Baba Ganoush, add salt or any other seasonings if needed and blend one final time
• Place the Baba Ganoush in a serving dish and let cool in the fridge. When you are ready to serve pour on Olive oil, minced Parsley and Red Pepper Flakes
Enjoy with warm pita bread, or fresh vegetables.
