Aloha Amigos.
INGREDIENTS:
– 2 Cups of Rice
– 1 Medium Sized Pumpkin (Chopped into cubes)
– 4 Potatoes (Chopped into cubes)
– 3 Carrots (Grated)
– 1 Cup of Mixed Peppers (Red, Green and Yellow. Chopped/Diced).
– 2 1/2 Tspn of Salt (The 1 is for the rice. The additional 1 is for the carrots, onion and oil mix. And the 1/2 is for the pumpkin and potatoes mix)
– 1 1/2 Tspn of Black Pepper
– 1 Tspn of Lemon Pepper (For the rice.)
– 2 Tbls of Paprika
– 1 Tbls of Tumeric
– 1 Tspn of Garlic and Herb Seasoning (Optional – To garnish the rice, once it is plated.)
– 1 Beef Flavoured Stock Cube
– 1 Tbls of Mild and Spicy Curry Powder
– 1 Tbls of Crushed Garlic and Ginger
– 1 Tbls of Cooking Oil (For your rice)
– 2 Cups of Cooking Oil to fry your Fish
– 1 1/2 Cups of Grated Cheese (For the Rice)
– 1/4 Cup of Sweet Chilli Sauce
– 1 1/2 Tbls of Brown Sugar
– 2 Tbls of Butter
– 2 Tbls of Lemon Juice
– 2 Eggs
– 1 Onion (Chopped or Diced)
– 410g of Baked Beans in Tomato Sauce
– Southern Coating Flour (Lemon and Herb Flavoured. To coat the fish.)
Tips:
1. Do be mindful of your timing and your heat levels with regards to the different cooking pots. Everything cooks at a different pace, taking into consideration the different heat levels.
2. Work at a steady and semi-fast pace, to avoid from having your fish burn while working on the other pots on the other stove plates.
3. Pre cut, peel, chop, measure and place all the required ingredients on standby, before you switch on your stoves to cook.
4. If possible, please use, non-stick pans and pots to cook your food. They’re user friendly and don’t burn your food as much.
