How to Cook King Prawn Curry | Jumbo Shrimp Curry

In this video I demonstrate how to cook my favourite king prawn curry, elsewhere known as jumbo shrimp curry. Ingredients list below.

Ingredients;

300g king prawns/jumbo shrimp peeled and butterfly cut.

Curry paste:

5 shallots or 1 medium brown onion, chopped.
9 cloves of garlic.
3cm/1″ cube of fresh ginger, chopped.
2 tomatoes, halved.
1 tbspn paprika.
1.5 tbspn curry powder.
1 tspn tamarind paste or the juice of half a lime.
1 tspn sugar.

Blend until smooth.

For frying:

4 tbspns vegetable oil.
1 scant tspn of panch poran.
A generous pinch or one stem of curry leaves.
5 shallots or 1 medium brown onion, roughly-chopped.
1 tbspn lime juice.
3/4 tspn garam masala.
Salt to taste.

Garnish:

A slack handful of fresh coriander/dhania/cilantro, roughly-chopped.

Lime wedges on the side.
