HOW TO MAKE CAT’S ORIGINAL CHILLI RECIPE

– I – N – G – R – E – D – I – E – N – T – S –

THE CHILLI
– 2 onions
– 3 cloves of garlic
– 2 tins of chopped tomatoes
– 2 tins of any kind of beans
– 2 carrots
– 1 courgette (zuchini)
– 2 tsp cumin
– 1 tsp corriander
– 1 tsp smoked paprika
– 1 tsp salt
– 1/2 tsp cinnamon
– 1 tbsp tomato puree
– 1 tbsp liquid smoke (optional)
– 1 tsp chilli (optional)

TO SERVE
– Rice
OR
-Spaghetti
OR
-Jacket Potato
OR
– Tortilla chips with guac, coconut yoghurt and vegan cheese

– M – E – T – H – O – D –

STEP 1: Dice the onion, grate the garlic, add into a pan with some olive oil and fry until browned.
STEP 2: Grate the carrots and the courgette and drain and rinse the beans.
STEP 3: Add the tomatoes, carrots, courgette and beans to the pan along with all the spices and the tomato puree and simmer for half an hour.
STEP 4: Serve with guac, yoghurt and tortilla chips OR rice OR spaghetti OR a jacket potato, enjoy and tell The Vegan Brit how it went!
