RECIPE
Approx. 2 dozen roma tomatoes (or any kind of tomato, I prefer roma) into a food processor
3 chopped jalapenos, remove seeds to reduce heat
1 ½ cup of pickled banana peppers chopped
½ cup red pepper chopped
½ cup green pepper chopped
½ cup yellow pepper chopped
3 cloves garlic chopped
1 cup red onion chopped
1 ½ cans of tomato paste (small cans)
¾ cup cider vinegar
1/8 cup white vinegar
2 tbsp white sugar
1 tbsp black pepper
1 tbsp cumin
1 tbsp paprika
1 tbsp dried oregano
2 tbsp salt
½ tsp chilli powder
½ tsp chipotle powder
All into a large pot, bring to a simmer, stir often
Prep jars and lids with boiling water, add a good pinch of fresh cilantro and 1 tbsp of lime juice just before pouring in salsa.
Will make approx. 5 x 500ml mason jars of salsa!
