Ingredients:
*Lamb Lean mince meat (Use meat of your choice) – 400 gms
*Natural Bread Crumbs – 75 gms
*Egg – 1
*Salt – to taste
*Coriander powder – 1 TBSP
*Pepper – 1 TSP
*Chilli/Paprika powder – 1 TSP
*Icecream Popsicle Sticks
*Ziplock cover
*Oil for greasing
Sweet Chilli Sauce:
*Red Chillies – Fresh/Dried/Combination
*Garlic – 5-6 cloves
*Water
*Vinegar – Apple Cider/Rice/White – 1/3 cup
*Cane Sugar – 1/3 cup
*Corn flour -3 tsp mixed in water
*Salt- 1 tsp
Method:
-Wash & drain water from mince meat
-Beat egg in a bowl and add breadcrumbs to this mixture
-Mix well
-Add breadcrumbs mixture to mince meat & mix well
-Add seasoning – Chilli powder, coriander powder, pepper and salt to taste (add your choice of seasoning)
-Mix well and keep it aside to airdry
Sweet Chilli Sauce:
We need sweet chili sauce for this recipe, homemade is very easy to make but if you prefer you can use store bought as well.
-Chop 6 Red chillies (I use 3 dry & 3 fresh) – You can use single or a combination .
-Add to blender jar
-Add water and using hand blender crush the chillies
-Chop garlic and add to this mixture and blend again
-Remember we are not making a paste , just a crushed sauce.
-Take a saucepan and add blended chillies on low medium heat
-Add salt, vinegar and sugar
-Stir and bring it to boil
-Add cornflour solution and mix
-When sauce thickens , turn off the stove.
Store in a sterilized glass container.
Preparing Kebabs:
-Add 1 tsp Oil to ziplock cover , seal and spread it.
-Take ice-cream sticks and mince meat mixture
-Shape like ice-cream onto the stick and do the same with the complete mixture.
-Now take a bowl and add 3 TBSP sweet chili sauce and juice of 1 medium sized lime
– Add salt
– Mixed dried herbs of your choice (Rosemary, Thyme, Basil, Mint)
-Mix well
– Now take the popsicle shaped kebabs and coat with the sauce.
-Garnish with dried parsley (optional)
-Seal the kebabs in Ziplock cover and refrigerate for minimum 1 hour.
-You can store these kebabs in refrigerator for 1-2 days and use when you need, you can prepare these in advance for party.
Kebabs in Oven:
-Preheat the oven at 180 C
-Arrange kebabs on a greased baking sheet
-Bake them for 30 mins at 170 C
-Flip halfway
-Kebabs are ready.
Kebabs in Airfryer:
-Preheat airfryer
-Drizzle with oil (you can skip this)
-Arrange the kebabs in air fryer basket
-Airfry at 170 C for 15 mins, flipping halfway.
-Kebabs ready.
Serve your homemade popsicle kebab with sauce, salad and make it a perfect appetizer.
