Ingredients:
Parmigiano Reggiano Polenta Fries
1 Β½ cups polenta
1 cup Parmigiano Reggiano, grated + additional for garnish
2 cups vegetable stock
2 cups milk
2 tbsp butter
1 tsp garlic puree
2 tsp kosher salt
2 tbsp parsley, finely chopped
Β½ cup vegetable oil
Smoked Paprika & Lemon Mayo
1 cup mayonnaise
1 tsp smoked paprika
2 tsp fresh lemon zest
1 tsp fresh lemon juice
ΒΌ tsp kosher salt
Garnish
Β½ cup parsley, finely chopped
Directions:
1. In a large pot on medium heat add 2 cups of vegetable stock, 2 cups of milk and bring to a simmer. Add polenta and reduce the heat to low medium, stirring frequently. Continue to stir and add water if the mixture becomes too thick.
2. Meanwhile grease an 8×8 baking dish or line with parchment paper. Combine all ingredients for the mayo in a mixing bowl and set aside. Approximately 15-20 minutes later the polenta will become tender.
3. Remove it from the heat and fold in the Parmigiano Reggiano, butter, garlic and salt. Pour mixture into prepared baking dish and spread out evenly. Place the dish in the fridge to fully set, approximately 45 minutes to one hour or 15 minutes in the freezer.
4. Once the polenta is set, remove it from the vessel and slice it into the shape of fries. In a large pan on medium heat add 2-3 tbsp oil. Sear fries in batches to avoid crowding the pan, sear until golden brown on all sides and remove to a tray lined with a paper towel or a kitchen rag to remove excess grease.
5. Serve fries topped with chopped parsley, Parmigiano Reggiano and mayo.
