Making one of our favourite nice warm and comfortable dinners a vegan sausage and bean hotpot.
With my Mam’s help, featuring Fudge my pet rabbit and enjoying the Day.

Ingredients

6 vegan sausages cooked and cooled
2 peppers
1 large red onion
1 tablespoon of water or olive oil
1 teaspoon of smoked paprika
1/2 teaspoon of garlic granules
chilli flakes (optional)
1/2 teaspoon of rosemary
1/2 teaspoon of time
1/2 tablespoon of balsamic vinegar
2 tablespoons of tomato purée
1 tin of chopped tomatoes
200ml of vegetable stock
1/2 teaspoon of vegan yeast extract (we used marmite)
2 tins of your favourite mixed beans (we used butter beans and mixed taco beans
1 teaspoon of vegan Worcester sauce
100g of spinach
Salt and pepper to taste
