Holiday season is the time when we all gather together with friends and family to share love and warmth. That’s when we enjoy a lot of food and stories. Who said that you can’t serve a delicious and healthy meal during the holiday season?! I want to share with you one of my favorite dinner recipes which I put together; it is light, full of flavor, and is so easy to make. The combination of Cornish hen, colorful and sweet potatoes, and garlic-lemon roasted zucchini, makes this dish so delicious, nutritious and healthy. And, besides, it’s all served hot. All that is left is to add a good cup of hot tea! Any leftovers would make a great lunch the next day.

Recipe: Cornish Game Hens (Makes: 1 Hen Serving Size: 2)
Ingredients:
Hen
1 (22oz) Cornish Game Hens, rinsed and patted dry
2 Tbsp Olive Oil or (unsalted butter, frozen, cut into 1 inch thick cubes)
4 Strings of Fresh Thyme
4 Strings of Fresh Rosemary
Stuffing
1 Lime, washed and sliced thinly
1 Lemon, washed and sliced thinly
1 Orange, washed and sliced thinly, optional
1 Honey Crisp Apple, washed and cut into ½ inch- thick sliced, optional
Half of Sweet Onion, coarse diced
4 Strings of Fresh Thyme, washed and dry
4 Strings of Fresh Rosemary, washed and dry
8 cloves Fresh Garlic (6 whole and 2 minced, divided – for the rub)
Dry Rub
1 Tbsp Mesquite Seasoning
1 Tsp Lemon Pepper Seasoning
1 Tsp Dried Thyme
1 Tsp Dried Rosemary
½ Tsp Salt, to taste
¼ Tsp Black Pepper, to taste
¼ Tsp Garlic Salt
1/8 Tsp Ground Cumin
1/8 Tsp Smoked Paprika (or less)
2 cloves fresh garlic, minced
Recipe: Roasted Sweet Potatoes (Yield: 2-4 Servings Size: ½ Cup)
1 medium Garnet or Jewel Sweet Potatoes, 1-inch diced
1 medium Purple Sweet Potato, 1-inch diced
2 Tbsp Olive Oil
½ Tsp Salt, to taste
¼ Tsp Black Pepper, to taste
¼ Tsp Garlic Salt
1/8 Tsp Smoked Paprika (or less)
Dash Ground Cumin
6 Strings Fresh Thyme
½ Red Onion (1/3 cup)
4 Small Sweet Peppers
Recipe: Roasted Garlic Zucchini (Yield: 4 Servings Size: ½ Cup)
3-4 medium Zucchini, 1 ½-inch diced
2 Tbsp Olive Oil
¼ Tsp Salt, to taste
1/8 Tsp Black Pepper, to taste
1/8 Tsp Smoked Paprika
½ Tsp Garlic Powder
Dash Ground Cumin
3 Tbsp Bread Crumbs
3 Tbsp Parmesan Cheese
