1st step ……
Ingredients for chicken marination …….
300 gm chicken breast……
3 cloves chopped or 1 tsp grounded garlic
1 tsp salt
1 tsp cumin powder
1 tsp kashmiri chillies or paprika or red chillies powder
1/2 tsp red chilli 🌶 flakes
1/4 tsp turmeric powder
2 tbs yoghurt
1 tbs white vinegar
1/2 tsp ginger powder
wash n dry the chicken breast then cut into thin slices or stripes then mix all mentioned ingredients … marinate chicken for half hour atleast.
2nd step
500 or 750 gm brinjals
salt as per required
wash and dry brinjals 🍆 then cut upper leaves as shown in video… then make slits on each brinjal with the distance of 1 or 1 and 1/2 cm …..
it shud be joined from one side…
as hassleback…..
then sprinkle pinch salt between slits in each brinjal 🍆….
now take marinated chicken and place a chicken slice or stripe in each slit of brinjal….
assemble all brinjals like this …..
3rd step …..
ingredients for veggies sauce….
3 red fresh chillies
3 green chillies
3 clove garlics with peel
1 medium tomato 🍅
2 small or 1 medium to large onion… ill prefer small in size
grill all veggies on stove flame by using grilling rack…..
when the skin of veggies almost burn then remove from heat and let it cool or take water bowl and dip and peel them …..
wash after peeling if they have some burnt skin pieces in it ….. now cut them and bland well to make fine sauce or paste….
final step
1 tbs oil
5 to 6 curry leaves
3 to 4 cinnamon sticks of 1 inch
oil for Brushing brinjals
take a wok and on low heat add curry leaves and cinnamon sticks ..fry until get strog aroma….then add brinjals and brush oil on top.
now pour veggies sauce…. leave on steam cooking for 15 minutes on low to medium heat….check after 10 minutes….in some areas brinjals cook quickly so if it is tender then dry sauce and take out but in my area it takes time if added some yoghurt or sour ingredient…. while chicken is been cut into thin slices and marinated so it will be tender too in this time….
I’ve cooked for 15 minutes…n it was done …leave sauce as it is or dry it ..it’s up to you…
tadddaaaaa a very delicious recipe is done …..
garnish it with fresh coriander and serve hot with dinner rolls or roti or cumin or boiled simple rice..enjoy your meal 😋
