Harissa Sauce Recipe- A chilli sauce with a beautiful aromatic taste and flavour.
Ingredients:-
4 Guntur Chillies
2 Byadagi Chillies
2 Kashmiri Chillies
2 Red Paprika
1 Tsp Roasted Cumin Seeds
1 Tsp Roasted Coriander Seeds
1 Tsp Roasted Fennel Seeds
1/2 Tsp Roasted Caraway Seeds (Shah Jeera)
8 Cloves of Garlic
1 Tsp Smoked Paprika
1/4 Tsp Bird Eye Chilli Powder
1 Tsp Salt
2 Tsp Chilli Water
1 Tbsp Olive Oil
1 and 1/4 Tsp Lemon Juice
1 Tsp Extra virgin Olive Oil
Method :-
1) Boil the dried chillies until soft
2) Roast the cumin seeds, coriander seeds, fennel seeds, caraway seeds
3) Put all the ingredients except lemon juice and Extra Virgin olive oil in the mixer
4) Once properly blended add in the lemon juice to reduce the heat of the Chillies and to add a nice tangy flavor to the sauce.
5) Next add your Extra Virgin Olive oil and give it a final blend.
Voila! You have your harissa sauce
Important Tips and Points
1) If you want a slightly fruity flavour to your harissa sauce then you can roast a red bell pepper on the gas (char it well). Thereafter remove the skin and add the bell pepper along with your Chillies into the mixer.
2) If you don’t want your sauce to be too spicy you can also remove the seeds from the chilli before adding it to the mixer.
3) The paste should have a nice thick consistency. It shouldn’t be runny like water.
