Goulash recipe – beef, venison, sausage or VEGAN!

This European Goulash recipe makes a hearty, easy healthy and versatile meal. Unlike American Goulash, it does not cook the noodles in the pot. You can use any meat or no meat at all and substitute with mushrooms, which turns it into a vegetarian – even vegan – goulash.

Must have ingredients are bell peppers, onion, garlic, tomato and paprika powder.
With exception of the meat, the traditional version can be made entirely with dehydrated items. The vegan version does not need any fresh items, as even the mushrooms can be used in dehydrated form.

Recipe:
1 pound meat (beef, venison, or sausage), chopped into junks OR 1 lbs mushrooms.
2 tablespoons oil

3 onions, chopped
1 glove garlic, or more to taste, finely chopped
2 large chopped bell peppers, you can use red or green or a combination
1 – 2 jalapenos , optional

3 fresh tomatoes or 15 oz can diced tomatoes (alternatively tomato paste thinned with some water will suffice).
1 pint meat broth or veggie broth

Spices to taste
Salt, black pepper, 2 tablespoons sweet paprika powder or a combination of sweet and smoked powder, personally I also enjoy some caraway seeds in it.

In a pot, brown the meat in the oil, add onions and saute, add garlic and bell peppers. Add tomatoes and spices and let simmer at low heat until bell peppers are soft and meat is done. This works well in a slow cooker ‘set it and forget it’ kinda way.
Add seasoning if needed.

Enjoy as is or serve with a side of potatoes, rice or egg noodles.
