GF Chicken Goulash 🐔 No more chocking on dry chicken!!! 🙈

INGREDIENTS:

1 lb chicken breast

2 medium onions
6 garlic cloves

2 bay leaves

1 cup frozen pepper (or 1 fresh)

1 14.5 oz can diced tomatoes

1 tsp paprika

1 cup of chicken/vegetable broth

Olive oil

Butter

Salt and pepper to taste

Dried herbs (optional)

INSTRUCTIONS:

1. Dice onions and mince garlic.

2. Add 1 tbs olive oil and 1 tbs butter (or ghee) to a big skillet, let melt. 

3. Once your skillet is hot – add onions and garlic, stir frequently for about 3 min.
4. When onions are soft and you can smell garlic – add sliced peppers and paprika, let cook on medium heat.

5. While cooking veggies – cube chicken into 05-1 inch cubes. 

6. Add tomato paste, bay leaves and chicken, stir to combine. Let cook for a few minutes and add salt and pepper, also add dry herbs that you like (I added some dill).

7. Let the mixture cook for another minute and add broth.

8. Lower heat and let simmer for 1 hour, stir occasionally.
9. And voila – delicious and NOT DRY chicken is ready, can serve with mashed potatoes/polenta or cauliflower rice – choose your favourite! 🙂
