Fluffy Vegan Keto Friendly Cauliflower Rice Recipe
Buy frozen riced cauliflower and steam in the bag in microwave for 4 mins
or
Buy fresh cauliflower and rice in your food processor then steam for 12 mins
Ingredients
2.5 cups steamed cauliflower rice
1 cup chopped red onion
1 cup chopped tomatoes
1/4 cup scotch bonnet.. leave out if you don’t like spicy
1 tsp paprika
1 tsp black pepper
juice of 1/4 lemon
top with 1/2 avocado or 1 tsp vegan butter and sliced almonds for extra health fat and nutrients
directions:
cook onion over medium high heat
season lightly with paprika and black pepper
add tomato
season again
add steamed cauliflower rice
season lightly again
add scotch bonnet if you like spicy
cook for another 5 mins
sprinkle lemon juice
Top with avocado or vegan butter and sliced almonds for extra health fat and nutrients
The trick to making it fluffy is steaming the cauliflower and not over cooking it
makes 2 servings
