Flavorful Hummus
Ingredients:
* 1 15 oz. can chickpeas, drained (reserve some liquid and a few chick peas)
* ¼ cup tahini
* juice of 1 large lemon juice*
* 2 cloves garlic
* 2 Tablespoons olive oil
* ½ teaspoon ground cumin
* ½ teaspoon salt (more to taste)
* paprika
Optional: 1 Tablespoon chopped fresh parsley for garnish
Directions:
1. In food processor, combine chickpeas, tahini, lemon juice and garlic. Process for 1 minute. Scrape sides and process for 30 seconds more.
2. Add olive oil, cumin, and ½ teaspoon salt, puree until smooth. Scrape sides then puree 30 seconds more
3. Add reserved liquid until desired consistency is reached, if needed.
4. Place in plate, drizzle additional olive oil, dust paprika, and place the reserved chickpeas and parsley in center.
Tips:
If too thick then add tahini (it’s a thickening agent even though it’s “liquid”); add olive oil or reserves chickpea liquid if it’s too thick. *To get more flavor, place lemon in microwave for 20 seconds and roll.
Serve with pita chips, pretzels, carrots, or whatever you’d like.
