Flaky Fish Salad Jewish Deli Style – The perfect shmear. Your bagel’s new best friend! Put on top of a toasted bagel, toasted crusty French Bread and serve with boiled eggs and Cornichons for brunch or serve with crackers as an appetizer for your next dinner party. Easily serves a crowd. Enjoy!

Recipe:
*FISH*
_______

Tilapia Filets – 1 lb – rinsed and patted dry
Season with Salt and Pepper on both sides.

Saute the fish in Extra Virgin Olive Oil on medium high heat for 3-4 minutes on each side.
When turning the fish in the pan, use two spatulas as the oil is very hot.

Carefully remove filets from skillet and place on a plate lined with paper towels. Allow excess oil to drip off of the fish until fish is cooled to room temperature.

Break the fish apart using your hands. Then take a fork and continue to flake the fish until it is mostly all broken apart and the texture is fine.

*Dressing*:
___________

1/2 of a cup of Mayonnaise
1.5 Tbsp of Capers
1.5 Tbsp of Caper Brine
1/2 tsp of Smoked Paprika
Small pinch of Salt (The Capers and Brine are already salty)
Freshly cracked black pepper
Scallions – 3 to 4 Large Scallions – Chopped
Dill – 1 small bunch or 1/2 of a medium bunch – Finely Chopped
Mix with fork until all ingredients are well combined.

Add dressing to salad and mix well. Cover and refrigerate for at least 30 minutes (1 hour is best)
Remove salad from refrigerator and add chopped scallions and chopped dill. Salad is ready for those bagels!
