Here’s the recipe step by step:INGREDIENTS
2 tbsp Oil
4 cloves of garlic
1 grated tomato
½ diced red pepper
½ diced onion
6 king prawns
100g shrimps
1 small squid
500g ground-grain rice
100g clams
100g mussels
1.4l hot fish stock
2 langoustines
1 tbsp paella seasoning
1 tbsp smoked paprika
Salt to taste
Lemon
METHOD
Pour oil into a paella pan, add diced onion, red pepper, garlic, and sauté. Push the onion mixture to theend of the pan and sear the king prawns on both sides. Remove the prawns from the pan and save themfor later.
Add squid, shrimps, clams, mussels, and fry for 2-3 minutes. Make a hole in the middle of the pan and add the grated tomato.
Then add the rice, paella seasoning, smoked paprika and mix well, coating the grains of rice with the oil. Cook for 1-2 minutes.
Pour over the hot fish stock, add salt to taste, stir very little. and cook until the liquid is consumed (approximately 18 minutes without stirring). Add the langoustines and king prawns to the pan around 3-4 minutes before the rice is completely cooked.
Garnish with lemon.
