Fire Chicken Wings – great recipe for baked chicken wings – not fried!!!!

Welcome Back!!! Why do all chicken wings have to be fried??? This delicious recipe is for chicken wings that are not fried, no coating, eggs, flour, etc. Just a 12-spice dry rub that is full of flavor. Despite the name, they are not too spicy in terms of heat – the cayenne pepper is completely optional! The other good thing is you can add/omit spices based on your choice of spices. But something about the combination of all these spices makes them really delicious. I know it’s a lot of spices, but what a great flavor!!! I am also including the recipe for a delicious cilantro lime dipping sauce that I make with these.

Dry Rub Ingredients

1/2 T Ancho Chili Powder (or double chili powder below)
1/2 T Smoked Paprika
1/2 T Paprika
1/2 T Onion Powder
1/2 T Kosher Salt (optional)
1/4 C Brown Sugar
3/4 t Chili Powder
3/4 t Cumin
1 t Garlic Powder
1/2 t Dried Mustard
1/4 t Black Pepper
1/4 t Dried Oregano
1/4 t Dried Thyme
1/4 t Cayenne Pepper (optional)

Directions for the Wings

1. Wash chicken wings and pat dry with paper towels
2. Mix all the ingredients above in a bowl with whisk or fork
3. Put chicken wings in bowl and add rub mixture, toss with hands until evenly distributed
4. Marinate at least 2 hours
5. Preheat Oven to 375 F
6. Bake on wire rack for 45 minutes

Cilantro Lime Sauce

1/4 C Parmesan Cheese
1 C cilantro leaves and stems
Juice from 1 lime
2 T yellow hot pepper paste (Goya label) or Aji Amarillo Paste (Inca Brand) – if you can’t find this, it’s available on Amazon – if you can’t order from Amazon, leave it out!
1 t White Vinegar
1 t Minced Garlic
3/4 C Mayo
