Hope all of you are doing well, had a great Thanksgiving, staying Safe and Healthy!!

Do you still have Ham leftover from Thanksgiving? Today I am making into a delicious new Dish, Ham and Cheese Grits Balls!

Creamy, Cheesy, and fried to golden perfection; you can serve this as a Meal or as an appetizer!! Great to serve at your Holiday Parties and Gatherings.

I used 2 1/2 cups of cooked grits not 1 1/2 cups.

1/2 cup diced ham
2 tbsp canola oil (for the ham)
2 1/2 cups cooked grits, cooled (old fashioned, stone ground, quick cooking, or instant)
1 cup freshly grated parmesan cheese (or any cheese)
1/2 cup all purpose flour
1/2 tsp smoked paprika
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp (Pinch) cayenne pepper
3 large eggs
1 cup panko breadcrumbs
Kosher salt
Canola Oil, for frying (or any oil)

Cook’s Note: You may add a little more ham if you like it a little more meaty. Also you can make these the day before and you can Fry them the next day!

In a large pan or skillet over medium heat, add the 2 tablespoons oil and bring to temperature; then add the ham and cook until brown for about 5 minutes. Remove the ham from pan and drain on a pan with paper towels. Set aside.

In a large bowl, add cooked ham, parmesan cheese, and grits; stir until well incorporated.

In one pan, add the flour, smoked paprika, onion and garlic powder and cayenne pepper; stir until well combined. In another pan, add the eggs and lightly beat them. And in another pan, add the panko breadcrumbs.

Scoop the grits mixture and roll them into 1/4-1/2 inch balls. Place the balls and roll them into the flour mixture, then roll them into the eggs, then roll them into the panko breadcrumbs; repeat the process with the rest of the balls. Then set the balls onto a pan and let them rest for 5 minutes; meanwhile in a large pot or large skillet, add oil and bring to temperature.

Slowly add the grit balls into the hot oil and fry on both sides until golden brown about 7 minutes. Remove from the oil and drain them on a pan with paper towels or wire rack. Sprinkle them with some salt on top immediately. Place them onto a platter, serve and enjoy!!
