1 lb. 11oz pork, 2 T. minced fresh garlic, 1 tsp. smoked paprika, 1/4 c. finely minced celery, 1/3 c. minced onion, 1 tsp. dijon mustard, 1 T. cognac/brandy, 1 egg, 1 c. breadcrumbs, 2 T. sage butter( see my recipe on my channel) or my website- chefrobertkhoury.com), 2 tsp. salt, 2 tsp. sriracha hot chili sauce.
convection oven set at 350 cook for 45 minutes. Pork should be 150 degrees.
