2 Tbl Olive Oil
1 large Yellow Onion, diced
2 Tbl. garlic, minced
1 Green Pepper, diced
1 Red Pepper, diced
1 tsp. Cumin, ground
1 tsp. Paprika
Pinch Red Pepper Flakes (optional)
6 vine-riped Tomatoes, diced
1/2 cup Tomato Sauce (low-sodium is best)
1 tsp. Sugar
Salt and Pepper (to taste)
7 Large Eggs
