Eggs Benedict w/ Reverse-Seared Tomahawk Steak on a Big Green Egg

We took a classic eggs benedict and gave it our own West Coast BBQ twist by adding a wagyu tomahawk steak! This is a perfect recipe for Valentine’s Day (or any day for that matter!)

Ingredients
– 1 tomahawk steak (any cut of steak will suffice)
– 3 poached eggs
– Hollandaise sauce
– Smoked paprika
– Green onions or chives
– Your favorite rub or seasoning

Tomahawk Steak Eggs Benedict Recipe
– Generously coat all sides of your steak with your favorite rub or seasoning
– Set up your grill for indirect cooking (on a Big Green Egg, simply insert your ConvEGGtor to achieve this!)
– Once grill temperature reaches 275 degrees, place steak in the middle of the grill
– Close grill lid and let steak cook until an internal temp of 110-115 degrees is reached
– Remove steak from grill, cover and set aside
– Increase temperature on your grill to about 500 degrees (on a Big Green Egg, simply remove the ConvEGGtor)
– Place steak back on grill and sear for 2-3 minutes per side
– Remove steak from grill and let rest for 5-10 minutes
– Place poached eggs on top of steak
– Drizzle with desired amount of hollandaise sauce
– Garnish with smoked paprika and green onions or chives
– Slice and enjoy!
