This is a healthy snack recipe from Brinjal/Eggplant, this method contains very less ingredient and easy approach for crispy and crunchy evening snack or served with your sandwiches.

Ingredients:
250gm Brinjal/Eggplant
1 tbsp olive oil
1 tbsp apple cider vinegar or lime juice
1 tbsp maple syrup or sugar
1 tbsp vinegar
1 tsp paprika or chilly powder
1 tsp cumin powder
– slice eggplant thin
– let it dry for 10 minutes
– in a bowl add oil, vinegar, syrup, paprika, and cumin powder
– mix marinade properly
– add slices to marinade
– arrange on the baking tray
– bake at 150*C for 25 mins on one side and 25 mins for another side
-incase of no availability of oven, roast in a pan with little oil until crisp.
