After that last recipe of the pineapple upside down cake which was everything but simple, today i’m bringing you a super easy curry recipe. This is my go-to curry when I have very basic ingredients: eggplants, peas, some tomatoes and a lot of curry because curry is life !

QUICK RECIPE
*Ingredients
Vegetables: Eggplants, peas, cherry tomatoes, shallots & garlic
Spices: thym, rosemary, paprika & curry
Coconut milk
Some butter
Some optional curcuma
Rice as a side
*How to:
– Melt some butter, add garlic & shallots. Cook for a couple of minutes.
– Add all the eggplant, then cook for 5 minutes then you can add the peas.
– Add the spices, then the tomatoes.
– After a couple of minutes, add the coconut milk.
– Don’t hesitate adding more spices if you want a stronger flavor or more yellow-ish color. Same for the coconut milk.
– Simmer for 10 minutes.
– Serve with some rice !
