Nothing like a fresh cucumber from a garden. Nothing like it. Try it.
*Note. The following is a Hummus recipe sent to me by another you tube channel.I was told he is a chef who copied the recipe from one of his classes. I have not tried it, but it looks promising:
Peaceful Living- You Tube
Hummus with Tahini,
12oz chickpeas (bag of dry chickpeas), soaked overnight
5 fl oz fresh lemon juice
3 garlic cloves, crushed in salt
3 fl oz extra virgin olive oil. NOT BLENDED OIL
4 1/2 oz tahini
Salt as needed
Paprika as needed
1 oz chopped fresh parsley
Boil chickpeas in water until tender, 1 to 2 hours. Drain the chickpeas, reserve the cooking liquid.
In a food processor, blend the chickpeas, check the thickness of the mixture. If its to thick add a little of the cooking liquid, you want it more on the thick side a smooth paste.
Add the lemon juice, garlic, oil, tahini, and salt. Process until well incorporated.
Adjust the seasoning and consistency, garnish with paprika and parsley.
If you want to add roasted red peppers, use the ones in vinegar. Make sure you blot out as much of the liquid on the peppers or the mixture will be too runny blend it well to the mixture. I add the peppers to taste. Julienne a few of them for garnish.
Do the same step as above if you want it with green olives instead of the peppers. Chop a few of them for garnish
You can also use lg can (14oz) of Goya chickpeas instead of dry chickpeas, and skip the cooking process.
