Today we are making the ultimate vegan bacon with a recipe remix from Sauce Stache. I’m merging his mochi bacon recipe with yuba or tofu skin. This is literally the best vegan bacon! Who would think you could make bacon from rice flour? This plant based bacon is easy to make, sweet, savory, crispy, and delicious! Scroll down for the recipe!

1 sheet yuba, fresh or rehydrated https://amzn.to/3jqNDdY

3 tablespoons mushroom seasoning https://amzn.to/3l9qYTW
1 tablespoon nutritional yeast
1/2 teaspoon smoked paprika
1 teaspoon paprika
1 tablespoon maple syrup
1 tablespoon tamari
1 teaspoon liquid smoke
1 teaspoon miso
3 tablespoon coconut oil, melted

2 tablespoons potato starch, plus more for rolling

1 cup water

Place all marinade ingredients into a bowl and mix well. Marinate the yuba with about 2-3 tablespoons of the bacon marinade and refrigerate. Add 2 tablespoons of potato starch to the remaining marinade. Mix well and refrigerate. Place rice four and water into a microwable bowl with a lid. Mix well and microwave for about 3-3 1/2 minutes, removing every 30 seconds and stirring. This will form a stretchy mochi dough. Allow to cool for about 5 minutes. Sprinkle a piece of parchment paper with potato starch liberally. Place your mochi onto the parchment and carefully roll out until it about the same size as the yuba. Place marinated yuba on mochi and add remaining bacon flavoring. Roll into a burrito, using the potato starch to avoid sticking. Roll tightly in parchment and plastic wrap. Place in freezer for at least 4 hours or until fully frozen. Thaw for about 10 minutes before slicing. Cook slices of bacon in 2 tablespoons of oil for 8-10 minutes on low heat. Flip, sprinkle with salt, and cook for an additional 4 minutes. Enjoy!
