Easy to Make Hungarian Pancakes (Palacsinta) – by Kitchen Paprikash

“Palacsinta” is one of the most loved desserts in Hungary. You can’t make enough of these, so be prepared for standing by the stove for a long time making dozens of Palacsintas 🙂
We usually eat this with farmers cheese filling, but it’s delicious when filled with apricot (or other types of) jam and I like it with cocoa-sugar mix too.
Here is the recipe: (makes about 22-24 pancakes)
Ingredients: (I used metric, because that’s how I learned the recipe originally)

30 dkg flour
2 eggs
5 dl milk
1 dl seltzer
1/2 tbsp sugar
2 tbsp oil
pinch of salt

Filling:
1/2 lb farmers cheese
1 egg yolk
4 tbsp sugar
1 tbsp sour cream
handful of raisins
1 pack vanilla sugar
zest of 1 lemon

1. Mix 2 eggs, 2 tbsp oil, pinch of salt, and 1/2 tbsp sugar well
2. Pour in the flour and stir
3. Pour half of the milk in and stir until you have a smooth batter
4. Add the rest of the milk and stir again
5. Pour the Seltzer in and gently mix – you should have a light, creamy batter
6. Heat a 10″ crepe pan on a medium heat and brush with oil
7. When it’s hot (but not too hot!) pour half a ladle of batter into the pan and spread it around quickly
8. Cook for 1-2 minutes, then turn over with a knife
9. Cook the other side about 20-30 sec then slide it onto a plate
10. Continue with the rest of the batter (don’t forget to oil the pan)
12. Make the filling: mix together the farmers cheese, egg yolk, sour cream, sugar, raisins, vanilla sugar and lemon zest.
13. Fill the pancakes (with the farmer cheese mix, jam or cocoa-sugar mix). Roll them up and sprinkle with confectioners sugar.
Serve 4-5 palacsintas/person.
