easy summer meatballs with herbed ricotta and fresh summer salad
for the summer salad:
* cucumber
* cherry tomatoes
* sweet peppers
* black olives
* feta
* balsamic vinegar
* olive oil
* s+p
for the herbed ricotta:
* 250g ricotta
* fresh parsley
* juice of half a lemon
* s+p
for the meatballs:
* 500g ground meat
* 1 grated onion
* 1 egg
* 1-2 cup breadcrumbs
* fresh parsley
* paprika, oregano, garlic powder, onion powder
* s+p
instructions:
* combine all summer salad ingredients and let chill until ready to serve
* combine all herbed ricotta ingredients and let chill until ready to serve
* combine all meatball ingredients, form into shape, pan fry 2 minutes each side then finish in the oven at 180C for 10-12 minutes or until cooked through.
serve with pita bread, garnish with chili pepper and enjoy
