ROSEMARY BEEF RECIPE
INGREDIENTS
• 1 cup Red Onion (diced)
• 1 Cup Celery (diced)
• 1 Cup Carrots (diced)
• 4 Cloves Garlic (chopped)
• 2 lbs Beef Brisket (diced 1-inch square)
• 2 tbsp Salt
• 2 tbsp Pepper
• 2 cups Beef Stock
• 1 cup Tomato Sauce
• 1 tbsp Dry Oregano
• 1 tbsp Dry Thyme
• 1 tsp Dry Cayenne
• 1 1/2 Dry Paprika
• 1 tbsp Chilli Flakes
• 1 tbsp Rosemary
• 3 Bay Leaves
INSTRUCTIONS
• Season beef with salt and pepper and dredge in flour lightly
• Saute red onion, celery and carrots for 3-4 minutes in a large pot over medium-high heat
• Add garlic
• Add beef. Cook until the beef is nice and brown
• Add beef stocks and tomato sauce
• Add the seasonings (1 tbsp salt, 1 tbsp black pepper, oregano, dry thyme, dry cayenne, dry paprika, chilli flakes, rosemary and bay leaves
• Simmer for at least 2 hours
PAPRIKA RICE RECIPE
• 1 cup Red Onion
• 4 Cloves Garlic (minced)
• 3 cups Brown Rice (Cleaned and Rinsed)
• 1 1/2 Dry Paprika
• 1 tsp Dry Turmeric
• 1 tsp Salt
• 1 tsp Black Pepper
• 1 tsp Dry Cumin
• 1 tbsp Tex-Mex Seasoning
• 4 Cups Chicken Stock
• 2 tbsp Tomato Paste
• 1 Jalapeno Pepper (Sliced)
• 1 Cup Black Beans
• 1/2 Cup Cherry Tomatoes (sliced in half)
• 1 Lime (Juice)
INSTRUCTIONS
• Saute red onion in a large skillet over medium-high heat for 2-3 minutes
• Add garlic and stir for a minute
• Add brown rice and the dry ingredients (Salt, pepper, turmeric, paprika, cumin and Tex-Mex seasoning). Mix well for a minute.
• Add chicken stock and tomato paste
• Cook on low heat for 30-40 minutes or until the rice is done.
• Add Jalapeno pepper, and black bean and cook for another 2-3 minutes
• Add a squeeze of lime and cherry tomatoes
