A quick delicious eggplant recipe with mozzarella cheese for the vegetarians out there.
Ingredients:
1 medium onion diced
1 large eggplant chopped
1 medium tomato chopped
1 teaspoon of salt, black pepper, paprika, dried thyme, cumin
100g grated mozzarella cheese
1/2 cup of chopped green coriander
1 cube of butter
Method:
Chop the eggplant into cubes. In a skillet, melt a cube of butter.
Add the diced onion and sprinkle 1 teaspoon of salt, black pepper, paprika, cumin and dried thyme.
Next, add the tomatoes and eggplant. Mix throughly.
Next add the mozzarella cheese and the coriander on top, leave to cook for about 5 mins.
Then there you have it, an easy quick healthy recipe with the least effort.
Can be kept for a couple of days in the refrigerator.
Served with toasted bread of your choice.
