Today we’ll be cooking this easy and delicious Jamaican curry chicken. This recipe is a family favourite in many Caribbean islands and it’s super easy to make.
⬇️INGREDIENTS⬇️
3 lbs Leg Quarter Chopped
2 tablespoons Canola/Vegetable Oil
1 tbsp creole Seasoning
1/2 tbsp ginger powder
2 tbsp curry powder
2 tsp Sea Salt (to taste)*
1/2 tbsp Chili Powder (to taste)
1 tsp Smoked Paprika
2 tablespoons Canola/Vegetable Oil
2 medium Irish potatoes peeled and Quartered
1/2 medium Red onion chopped
1/2 Green bell pepper chopped
2 medium carrots chopped
4 cloves garlic minced (1 tbsp)
1tbsp leeks
fresh thyme
You can serve this with white/brown rice, quinoa, roti, cauliflower rice, etc.
