It is very easy, I made 2 batters for this recipe, one wet and one dry batter. I also dry brined my chicken wings for 6 hours. You can brine your chicken overnight or if you do not have enough time 6 hrs will do.
These are the exact measurements that I used in this Mountain of Chicken Wings recipe
2kg of chicken wings
Dry Brine for 6 hours
salt 1tbs
pepper1tbs
Dry batter
1c flour
1c cornflour
1/2 tbsp salt
1/2tbsp pepper
1/2tbsp paprika
1 1/2 tbsp garlic powder
1 tbsp onion powder
wet batter
1cflour
1c cornflour
1.25 c soda water
Fry for 9-10mins
