tired of grilled or fried eggplants?, here is nother way of preparing them. this is a dish that i also learned from my moroccan mother in law. this is the original “zaalouk” in maghreb. it is so simple to do yet very healthy. hope you enjoy doing it.
INGREDIENTS:
3 eggplants
salt
oil
half cup herbs (parsley/coriander)
2 cloves garlic
1 tsp of salt, cumin, curcuma, paprika, pepper, ginger powder
olive oil
2 grated tomatoes
