In this video I show y’all how to y’all how to make an easy and quick skillet blackened cod recipe. Cod is a delicious light tasting white fish that is most heathy when served wild caught versus farmed raised. This recipe comes together in about 10 minutes with a homemade blackening seasoning in a cast iron skillet. This dish pairs well with seasoned rice and steamed veggies.
Shopping List:
Cod filets (preferably wild caught)
Blackened seasoning (store-bought or my homemade recipe listed below)
1 tbsp olive oil
Limes wedges
Parsley for garnish
Homemade Blackened Seasoning:
1/2 tsp. each of dried thyme, oregano and black pepper
1 tsp. each of cayenne, sugar and red pepper flakes
1 tblsp. each of brown sugar, onion and garlic powder.
1 1/2 tblsp. dried cumin
2 tbsp. kosher salt (if using table salt use 1/2 that much)
2 1/2 tblsp. paprika
Directions:
Add the spices to a spice blender and pulse until you reach a powder-like consistency. If you don’t have a blender simply place in a zip-lock bag and lightly pound with the flat side of a meat mallet.
Heat a cast iron or stainless steel skillet over medium heat with the oil. Pat the fish dry with paper towels then apply the blackened seasoning to both sides of the fish patting it in well. Cook each filet about 2 minutes per side over medium heat until the seasoning is a deep golden color (known as blackening) and the fish flakes with a fork. Sprinkle with a squeeze of lime and serve with rice and steamed veggies. Garnish with fresh parsely.
