Learn how to cook birria in the instant pot! This birria quesa taco recipe is cheesy and super delicous. Birria Quesatacos Con Consomé will quickly become a family favorite for a juicy, cheesy, wet taco.

Ingredients
3.5 lb fatty beef ( I used beef shank but chuck is also a good choice)
6 Guajillo chillies (remove seeds from all chillies)
1 pascilla chilli. (remove seeds from all chillies)
1 ancho chili (remove seeds from all chillies)
1 small onion
7 garlic cloves
1/4 apple cider vinegar
1 tbsp beef better than boullion
1 tsp beef knorr
1 tsp salt
seasoning salt (salt to taste)
2 bay leaves
2 tsp thyme
1 tbsp Mexican oregano
1/2 cinnamon stick
1 clove
2 tsp cumin
2 tsp coriander
1 tsp smoked paprika
diced sweet onion
cilantro
mozzarella cheese
corn tortillas

*remove seeds from chillies to prevent then from making your sauce bitter*
