**Ingredients:**
– 4 garlic cloves
– 1.5 lbs baby yellow potatoes
– 2 ½ tsp. kosher salt, divided
– 1 ½ tsp. smoked paprika
– 1 tsp. dried oregano
– ½ tsp. garlic powder
– ½ tsp. black pepper
– 4 Tbsp. extra-virgin olive oil (sub avocado oil)
– ¼ cup mayonnaise (preferably avocado oil mayo, like Chosen Foods brand)
– 2 Tbsp. plain full-fat Greek yogurt
– 1 Tbsp. finely chopped fresh chives, plus more for garnish
– 2 tsp. fresh lemon juice
– 2 Tbsp. grated Parmesan cheese
**Instructions:**
1. Preheat oven to 450ºF.
2. Place garlic cloves on foil, drizzle with 1 tsp. olive oil, wrap in foil, and roast in the preheating oven while boiling the potatoes.
3. Boil potatoes in a large pot with 2 teaspoons salt for 15 minutes until just past fork-tender. Drain and let sit for 5 minutes to drain excess water.
4. Remove roasted garlic from the oven; keep the temperature at 450ºF.
5. In a small bowl, combine smoked paprika, oregano, garlic powder, black pepper, and remaining ½ tsp. salt; mix well.
6. Drizzle 2 Tbsp. olive oil on the baking sheet, arrange potatoes with space in between, gently smash each down, brush with remaining oil, and sprinkle with spice mixture.
7. Roast potatoes for 20 minutes.
8. Roughly chop roasted garlic, mash into a paste, and add to a bowl with mayonnaise, yogurt, 1 Tbsp. chives, lemon juice, salt, and pepper. Mix well.
9. Sprinkle Parmesan on potatoes and return to the oven for 5 more minutes.
10. Transfer potatoes to a platter, garnish with extra chives, and serve with garlic aioli.
