Celebrate this world vegan day as 1st November by eating delicious protein rich vegan recipe which can be prepared in few minutes !!
These dishes can be had a breakfast or evening snacks.
Avocado Toast
Ingredients
1 avocado, halved and pitted
• 2 tablespoons chopped fresh parsley
• 1 ½ teaspoons extra-virgin olive oil
• ½ lemon, juiced
• ½ teaspoon salt
• ½ teaspoon ground black pepper
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
Baked Beans
Ingredients
• 1 tbsp of oil
• 1/2 onion, finely diced
• 2 garlic cloves, minced
• 1 tbsp of tomato purée
• 1/2 tsp smoked paprika
• 1/4 tsp dried thyme
• 1 tbsp of brown sugar
• 1 tbsp of soy sauce
• 240g when drained
• black pepper
• 1-2 tea spoon Worcester
• 1-2 tea spoon Tabasco
FOR THE MARINATED TEMPEH
• one block of tempeh, cubed (approx. 250 g)
• 1/4 cup balsamic vinegar
• 2 tbsp soy sauce (or gluten-free tamari)
• 2 tbsp pure maple syrup
• 1 tsp garlic powder
• 1 tsp tomato paste
• 1 tsp Paprika
• 1 tsp Sesame oil
• pinch of salt and pepper
FOR THE BAKED TOFU
• one 350 g block of medium or firm tofu
• 1 tsp garlic powder
• 2 tbsp soy sauce
• pinch of salt and pepper
FOR THE SALAD (PER SALAD)
• 1/2 cup chopped and steamed broccoli
• 1 cup or big handful of fresh arugula
• 1/2 cup diced cucumber
• 2 tbsp hemp seeds
• 1/4 of an avocado
• 1/3 cup chickpeas
• 1–2 tbsp drippy tahini or 3–4 tbsp tahini dressing
• 1/2 cup diced radish
• Few chopped green beans
