INGREDIENT FOR MARINATING FISH:
1/2 Tbsp Star anise,
1 Tbsp Pepper flakes
1/2 Tbsp garlic powder
1/2 Tbsp Dried parsley leaf
1 Tbsp seasoning cube
1 Tbsp onion powder
1 Tbsp Paprika
1/2 Tsp Salt
2 Tbsp Oil
Marinate for 5-10 minutes and fry in deep oil. set aside
Pepper mix
6 Red Bell pepper
12 Shombo ( Chilli pepper)
10 Scotch Bonnet pepper
Blend all and set aside
INGREDIENT FOR STEW:
1/2 cup Fish oil
1 big Onion
1 Tsp minced Garlic
1 Tsp minced Ginger
Fresh Thyme
1 cup Tomatoe
1 Tsp Curry
1/4 Tsp Salt
1 Tbsp Seasoning cube
1 Tbsp Paprika
1/4 cup Fresh Basil leaf
Method:
In a clean pot add a good quantity of fish oil, onion, garlic and Ginger, thyme fry for 4 minutes
Add pepper mix and prepped tomatoes fry for 10 minutes
Add curry, salt, seasoning cube, paprika, basil leaf cook for 5 minutes
Add 1 cup of water stir together
Drop the fried fish mix carefully to avoid breaking and cook for another 5 minutes
Fish stew is Ready!!!
