Beef Stroganoff (traditional Beef Stroganov) is a dish made with inexpensive cuts of meat, such as beef chuck or topside, sliced thinly and sautéed together with onions and mushrooms. The dish is then finished with a sauce made from smetana (sour cream), and served over a bed of tagliatelle or rice. Everything about this dish looks and sounds indulgent. That’s because it is! This is not a dish for the healthy to say the least but a dish that is naughty, but oh so nice!

The dish originates in Russia and takes its name from the influential Stroganov family.

Of course this 19th century dish has been modified throughout the years with a number of variations, with the most popular including paprika. It doesn’t stop there with this dish you can try it with chicken or mushrooms and the Brazilians even use shrimp.

For this recipe you will need:
Serves 2

300g sirloin steak
100g chestnut mushrooms
85g butter
1g parsley (chopped)
200ml beef stock
150ml sour cream
2 tsp red wine vinegar
1 tsp English mustard
1 ½tsp smoked paprika
2 shallots
1 clove of garlic
2 bay leaves
salt and pepper (to taste)
