Special BATHINDA BAIGAN | How To Make Typical PUNJABI Style Aubergine/Eggplant/Brinjal Masala

Standard Ingredient:
7 small aubergine/eggplant/brinjal – baigan
2cup fresh mustard leafs – saron de patte
2 big onion -pyaaz
2inch ginger – adhrak
10 garlic cloves – lasun

2tbs grated coconut – nariyal
1tbs coriander seed – dhaniya dana
1/2tbs fennel seed – soanf
1/2tsp cumin seed – jeera dana
1/4tsp Nigella seed – kalongi
1 pinch carom seed – ajmaoyan
1 clove – llong
2 green cardamom – hri elachi
2 whole dry red chilli – sabat red chilli

~Tadka- Tempering~
1tbs Ghee – clarified buter
1pinch fennel seed – methi dana
1/4tsp mustard seed – sarson dana
1tbs salt – namak
1tsp paprika – kashmiri mirach
1/2tsp turmeric – haldi
1/4tsp mango dry powder – ambchoor powder
1/4tsp chilli flakes – laal mirch
